One of those introvert ramen places. It shouldn’t be too hard since it doesn’t require a lot of space. The layout always looks as if they’re like a Subway, in accordance to have the kitchens and the dining area are aligned.
The target clientele would be singles. I feel that bars may still lead to depression because the person is still surrounded by people.
I think something like this could be good for cities like Los Angeles and the greater area around there.

If you go for it, good luck, my bud and I used to go and talk community college level politics and sociology there - I'm sure it was depressing for anyone within earshot.
We had two open up here, one down where the sailors hang out (in business and doing fine), the other opened in the upper class neighborhood and sank in about a season. Rich people didn't 'get it' - it was an $18 bowl of soup to them, and a tougher sell than pho shops.
I think it helps if you get some credentials in there too, a lead chef that's actually Japanese and worked in a real one is a great investment.
That's an interesting point on layout, I wasn't able to put that into words like you did, it just felt different!

I don't get it either, it's all vanity shops down there (owners don't need the money - just for social connections)

You would think something like a ramen shop for introverts would be successful in a largely populated area like the greater Los Angeles area. More people means more introverts.
Plus if you sold at a loss, in this economy, you might have more people flock there for cheap food and you’d likely make your profit back.
