I finally quit deleting files for this reason and just let the computer delete it fully after a few days in the wastebasket (Linux). Hasn't saved me yet but it could.

I used to scan documents in jpeg format at my old job - boss wasn't impressed

Unless you're using OCR, it's still being stored as a jpeg anyway, just a jpeg embedded in a pdf, lol
