Someone who is innocent has done nothing wrong. It is an absolute statement.
"Not guily" is a legal ruling.
Someone who is found not guilty was taken to court, but the prosecution failed to make a compelling case against them (or the jury was biased/tampered with). It does not determine the absolute fact of their guilt or innocence, only the legal burden of punishment.
