Chickens have remained chickens for a long long time. "Which came first, the chicken or the egg?" is a nonsense question. Eggs were always eggs and chickens were always chickens.

Evolution is a natural process where random genetic mutations which are advantageous to the species are passed down through breeding as those without the mutation have a higher mortality rate and are thus less likely to pass on their genes.
Selective breeding is a targeted process where individuals exhibiting desirable traits are isolated and bred with the intention of passing down the desired traits, regardless of whether they pose any survival advantage or not.
