Avec Panache! food truck is the result and culmination of decades of Chef and Owner Matt Miller’s study, experience, plans, and dreams. It represents a life renaissance.
As an undergraduate at Louisiana State University, Matt Miller supported his academic career by working at restaurants in Baton Rouge. Starting as a lowly pan man, whose job it was to pat hot fry oil off of fried seafood, he worked his way up through the system. Realizing that he loved food more than academics, he moved to New York City to attend Peter Kump’s Culinary School, which is now called the Institute of Culinary Education (ICE), completing both the savory and pastry programs, while working in some of New York City’s top restaurants like Dakota, which was also the city’s top nightlife hub in its day, and the elegant and exclusive Verbena, where Chef Diane Forley delighted the palates of some of New York’s most exclusive clientèle. In fact, Matt has worked in some of the country’s top restaurants, not only in New York, but also throughout Louisiana.
After returning to Lafayette to earn his BA and then MA in Languages from the University of Louisiana at Lafayette, Matt moved to mainland China where he lived for five years in Beijing and Kunming, and where he traveled and studied to learn the secrets of authentic Chinese and Asian cuisine.
To Chef Miller, a food truck is the perfect combination of functionality, affordability, profitability, professionalism, and fun. Not like the small, dingy food carts of yesteryear, today’s food trucks are mobile restaurants where talented chefs and cooks can equip a truly professional kitchen to produce cuisine just as delicious and high-quality as any brick-and-mortar restaurant. Avec Panache food truck is run with the greatest of care, professionalism, and skill to bring you exquisite gourmet sandwiches and sides inspired by cuisines from around the world.
What about the name Avec Panache? It comes from the French play Cyrano de Bergerac by Edmond Rostand, whose title character, a swashbuckling, confident, witty adventurer, boasts that he has done everything avec panache. The term translates directly to with plume, but refers to the confident swagger with which great deeds must be accomplished. Chef Matt chose this name because his mid-life decision to change careers and to open a gourmet food truck all by himself took some guts and gusto. Our logo includes the famous profile of Cyrano himself. When you taste our food, you will taste not only the delicious flavors of the world, but also the panache with which we cook!
Avec Panache! food truck is a subsidiary of Rosteet Culinary LLC, a limited liability corporation. Our plans are to continue to grow into more food trucks, and eventually into brick-and-mortar restaurants.
