For a lot of them I think it helps to ease their conscience, offer hope for an afterlife, allows them to get into certain programs with a religious angle within the prison, or they may think it'll help them to appear repentant and changed before a judge/parole-board/whatever. That last one never really seems to work IMO, but people do it anyway.
