1/4 cup unsalted butter
1/4 cup all-purpose flour
2 cups store-bought beef stock
1 cup store-bought or homemade chicken stock
2 teaspoons Asian fish sauce
2 teaspoons soy sauce
1 1/2 tablespoons rice vinegar
Kosher salt
1 freshly made batch homemade French fries from the Perfect Poutine recipe or about 2 pounds frozen thick-cut French fries, reheated following package instructions
12 ounces white cheddar cheese curds or mild white cheddar cheese, at room temperature and torn into bite-size pieces
Directions

Melt butter in a medium saucepan over medium-high heat. Whisk in flour and cook, stirring constantly, until lightly golden, about 2 minutes. Gradually whisk in beef and chicken stocks in a steady stream. Stir in fish sauce and soy sauce, bring to a boil, reduce to a simmer, and cook until reduced to 2 cups, 10 to 15 minutes. Remove from heat, stir in vinegar, and season with salt.

Place fries in a shallow bowl or dish, top generously with cheese curds, and ladle on hot gravy. Serve immediately.

1 tbsp tamari sauce
1 tbsp white miso
2 tbsp Tahina
1 tbsp lemon
1 garlic

OK Ducky lets talk quick about French Fries - When you get back home You gotta try this - So you are going to say French Fries not so much good for you and dats True
Y not good for you ? That Oil. Try this trick - Its really easy to do. - This does not work as well for the thick Fries - So slice Fries on thin size n the thinner the more better - Lay on a backing sheet - No oil necessary but you could wipe a thin very thin amount on the sheet but try with NO Oil the first try
Have Oven up to 450 or 500 Degrees - You need to learn by trial n error - Maybe 8-12 minutes per side which means you should turn them over once - Could try not turn over but its best to turn over IF YOU Want them crispy
Potatoes will get super Extra Crispy without any Oil at all - The down side to this IS - You have to eat them up quickly - They will absorb water from air quickly and go soggy quickly -
Bottom line is this trick also works for making Potato chips in oven with NO Oil - Healthy and tasty and easy to add seasonings

And of course you can pour on your gravy aka Poutine

Hey! I learned how to cook low fat potatos when i went vegan. I was eating maybe a pound of potato or more for dinner (and still losing weight)
Can slice them up any size, lie them down on parchment paper, they won't stick, no oil needed. Put it in the oven at 450 for about 45 minutes. Crispy on the outside and soft on the inside.
I love baked fries. I love carbs. I love eating a lot and losing weight
