pretty logical to me
which is faster, wait for the ramen to cool down in fridge then serve it out,
or serve it out immediately with hot ramen and ice?
plus when you mix the noodle and the ice, the ice melted along with the spice and form a kind of cold spicy soup

Ramen is on the menu plan 2nite. Time to clear out frig of some stuff n make room for new stuff.
So older mushrooms - a new pack of spinach - Left over pork chop and time to use up frozen shrimp b4 it gets freez burn - Will use 2Packs of Ramen noodles but will toss out the seasoning packet.
Oyster sauce some chicken stock and have some ham stock cubes in frezzer -
On Have you tried Vietnamese Pho? Rice noodles in a complex beef n other bone stock - thin slices of beef and touch of tripe n Tendon - more a texture then taste thing - Top off with Soybean sprouts and lots of fresh Basil on top - Great wonderful soup
So my Ramen will end up kinda full of dis n dat with elements of Pho and spicy from Sriracha and thin sliced jalapenos- n Basil which this years keeps on growing n giving
Oh and time to empty out a left over 6 or so Frozen Gyoza which get dipped in Chinese mustard as they leave my soup -

And should add for those that have not tried Pho
Its typical of places that serve this and most are Pho shops where its the only thing they do or the key thing they do - Choices of #1-2 #7 etc
So its common to offer in say #1 Pho to have Rare beef and a mix of cooked beef of another cut - All for different textures and flavors of beef. Vietnam food because of French colonization - Spices are added like Cinnamon and Cloves etc - Very fragrant - Best ordered in a restaurant as true home made is just to much work and doing a stock for 8 hours and shopping for the stock stuff is just wayyyyy to much trouble - just not practical -$6 to $7 a huge bowl is very much worth the cost and their are burgers from fast food joints that hit $5-6

Yes have tried that but it is difficult to find one serious legit Viet Pao maker in HK
most unserious fraud restaurant just think OH EASY EASY RICE NOODLE HOT SOUP RAW BEEF = PAO!
and they completely omitted the spice which is the selling point of Pao

Damn shame - A comment about making Ramen type soups and chilling em down b4 serving. I like Noodles al dente and never mushy - Italian pasta and any Asian noodle.
So the problem is - After noodles are cooked like in a wok or boiled and then placed in stock/soup they continue to adsorb the soup and turn on the mushy side.
So I recommend cooking the soup and only b4 serving cook up the noodles and then add.

ducky you live UP near the North Pole - Cold soups probably not so much so popular in the North Pole region - During the Summer I also serve soups on the Chill side
This one is Spanish Gazpacho and there is zero cooking of any ingredient and is ideal for summer and its generally vegetarian - One can serve with Kosher Shrimp if desired but in Spain they wood never do such

I highly recommend this movie. Its more about the Zen of Ramen and rebuilding a life and Ramen is a major element of the movie
Last movie Brittany Murphy made. She died of complex combo of stuff that greatly perplexed coroner - Dangers of over the counter cold meds etc and perhaps mold in the house she lived in
She should have eaten more Ramen

The menu said it is Hakata ramen, but honestly I doubt if they know what Hakata ramen looks like.

And the ramen itself is served kinda mushy, am dissapoint.
Tho I think it is to be expected, this is from some Honky revolving sushi bar, and not a popular one.

For sure I have had lots n lots of Ramen's with the Tonkotsu broth but do not remember having anything that looked like the pics Plus I wood remember if it had pickle veggies in it
So many Ramens to try. About 5 miles outside my infamous 15 mile zone are multiple specialty Ramen shops.

Reminds me of Soba's served cold or even a plate on a bed of ice to keep them cold. Really simple dishes easy to make at home - Buckwheat noodles with just a touch of sesame oil and diced green onion is a basic fast to make dish - so simple and it must be COLD to enjoy - Can be more complex but with Soba me thinks the more simple the more better
Grabbed a quick photo and its listed as Spicy Cold Soba so it probably has some of that quick shake pepper flakes in mix - In a quick rush to hit PO Box to pick up Clients $$$ which was supposed to be dropped off at my door or I wood look up recipe but betting that plate was Frig chilled for one hour b4 serving the fresh made Soba

Plates that sit on a thin bed of ice to keep the plate cold so the Soba remains Cold and you do not have to speed eat them b4 they turn to room temp.
Yea Soba is really good stuff and its supposed to be healthy -
On just buy a package of the Soba as it takes 3 minutes to cook and is supposed to be quick chilled in ice but the recipe for previous pic - they guy says he just rinsed in tap water
Some sesame oil n green onions - recipe says Chile oil for the heat which means anything for heat works and you can do home made fast

Area they gave us to set up wot is about a Mansion house size living room - Totally brick walled off from the KGB stuff so even if we wanted to see wot waz going on - Not a chance in hell.
The buckwheat as gruel in Russia is mostly popular at locations next to China or Korea cause the Buckwheat origins is Asia
1/3 cup soy sauce
1 tablespoon molasses
1/4 cup brown sugar
1/4 cup tahini
1/4 cup sesame oil
1/4 cup chili oil (more or less to taste)
3 tablespoon balsamic or red wine vinegar
1/2 bunch thinly sliced scallions, white and green
1/2 lb soba noodles
large bowl filled with water and ice
Place soy sauce in a pan over high heat and reduce by half. Turn heat to low, stir in molasses, and warm briefly. Transfer to a serving bowl. Add brown sugar through scallions and whisk to combine.
Bring a large pot of water to boil. Add noodles; bring back to a boil, and cook, stirring occasionally, until they just begin to soften, about three minutes.
Have a large bowl of iced water ready. Drain noodles, plunge in ice water, and drain (I just rinse with cold water in the colander). Transfer noodles to the serving bowl that has the sauce, toss well and chill. Serve cold or room temp.
Damn this recipe is not even from Japanese - its original recipe from City Cuisine by Mary Sue Miliken and Susan Feniger - Two gals one of which is Lesbo - No them both from years living in LA

Even Green has learned to use a coffee pot to cook a full meal in.
