In USA its common to order up Chinese Chow Mein aka Stir Fried Noodles. ITS NOT really a Chinese for real dish as no such thing used to be found in China proper.
Boiled wheat noodles then drained and then stir fried as bases for adding crunchy bits of say celery - onion etc and maybe chicken or pork in slices.
In China its more common to boil noodles then pan fry but noodles are not so much stir fried as Pan sit and brown crispy and flip over a bit
So Crisp on one side n not so much on other - Its a texture thang. __If ON is around__ he can discuss in Eubonics THIS

You start flinging your arm around, knocking the entire fryer over whereupon several quarts of burning oil spill directly onto the front of your pants. Your hands are red masses of 3rd degree burns so you are having trouble undoing your button and fly.
I hope they are able to repair what was once your dick.
