When you make a video call, which to my knowledge uses a webcam, during the main call screen do you see both yourself and the person you're talking to or just the person you're talking to?

You can turn off your camera and just leave your mic on if that's what you're asking. You'll still be able to see their cam. If you're really paranoid you can disable your camera hardware and/or put a piece of electrical tape over it. Then you can easily enable it and remove the tape when you want to use it in the future. Personally I think you should conceal your secret identity by wearing a balaclava 24/7.
