I think it has more to do with Christian oppression. Black and red are both colors associated with the Devil, and blacks were portrayed as godless heathens to justify slavery. Since red hair is a recessive genetic trait, it would have been rare historically and the Christian explanation for this was probably something to do with the child being born out of wedlock, and thus a sexually transmitted demon.
