I make my own TJ street version of Tacos. Takes some shopping and work. Took me 4Ever 2 find out how the Chile Rojo is made and that was first hand in TJ when I asked at a small shop where the gal showed me.
Street Tacos in TJ are still amazing. SD Reader often reviews roving taco street carts but so far have yet to locate them. Menudo on the street is a great find.

I love eating Menudo without the hominy. I'd subsitute chicarones with full fat on mine. Keto 4 lyfe.

I am big on the Hominy - Just yesterday I bought chicarones the real deal as in photo. Small amount to try vs the store bought in bag stuff.
Looked so damn good I just had to try the real deal. Had to add salt an more salt then LOTS Of Salt - Stuff ain't so good without Salt.
This AM I tried a chunk but over night its now not so Crunchy. For sure it wood burn out the moisture IF I were to heat it up. Probably wood explode in the Microwave.
