A very good question.

They are fun because by holding such a snake by the tail and wiggling your wrist slightly, you can transmit movement and create an illusion of a snake being alive.

There were also snakes made of tiny plastic segments. That variant is even better for such "magic" as even the slightest movement of your wrist can control the snake's whole body. I used it in a magic trick as a dowsing device and I could make it look that the snake chooses a person randomly.
