Bok choy isn't a typical ingredient of western cooking though, so it makes sense that there isn't much selection in general grocery stores. Like maybe a Chinese-American born to Chinese immigrants wants to make a traditional dish for their kids, or a regular American just wants to try cooking an Asian dish, they might just use whatever is at the regular grocery store because it's convenient. On the other hand, if you actually grew up in Asia and want to make a traditional dish, you're not gonna settle for the wrong type of bok choy because you can taste the difference.
